Grilled Roasted Garlic Potatoes

Crispy grilled potatoes are a breeze with foil packets! Perfectly seasoned, they're the best way to cook potatoes on the grill without heating your kitchen.

Ingredients

  • 2 lbs. red potatoes
  • 2-3 tablespoons olive oil
Potato Seasoning
  • 1 teaspoon rosemary
  • ¾ teaspoon oregano
  • ¾ teaspoons thyme
  • ¾ teaspoons sage
  • 1/8 teaspoons nutmeg
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Method

  1. Combine the spices for the potato seasoning. Drizzle olive oil over the spice mixture and stir well.
  2. Slice the potatoes into ½ inch thick slices. Thinly slice off the round ends so each potato side lays flat on the grill.
  3. Place the potato slices into a large bowl. Drizzle them with the olive oil/seasoning mix and toss to combine well.
  4. Preheat the grill to medium-high heat.
  5. Layer two large pieces of foil. Coat the foil with cooking spray.
  6. Place the potatoes on top of the foil, in a single layer if possible. Cover with another sheet of foil and seal it shut.
  7. Place the foil packet on the grill and shut the lid. Heat for 10 minutes, then flip with kitchen tongs. Cover and heat with the lid shut for 10 more minutes, or until the potatoes are cooked through. Remove and serve.
