Crunchy Coconut Chicken

This gluten-free crunchy coconut chicken is ready in 30 minutes and can be fried, baked, or air fried. A kid-approved dinner favorite!

Ingredients
  

For Frying
  • 2–3 inches vegetable oil for frying
For the Coating
  • 1/2 cup cornstarch
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional
For the Egg Wash
  • 3 large eggs lightly beaten
For the Coconut Coating
  • 3–4 cups sweetened shredded coconut such as Baker's Angel Flake
For the Chicken
  • 3–4 medium boneless skinless chicken breasts cut into strips or nuggets

Method
 

Prepare the Oil
  1. Pour about 2 to 3 inches of vegetable oil into a medium pot. Heat over medium heat until the oil reaches 365°F. To test, dip the end of a wooden spoon into the oil; if bubbles form around it, the oil is ready.
Set Up the Breading Station
  1. In a shallow bowl, whisk together the cornstarch, salt, black pepper, and cayenne pepper (if using). Set aside.
  2. In a second shallow bowl, lightly beat the eggs.
  3. Place the shredded coconut in a third shallow bowl.
Coat the Chicken
  1. Take a piece of chicken and coat it thoroughly in the cornstarch mixture, shaking off any excess.
  2. Dip the coated chicken into the beaten eggs, making sure it's fully covered.
  3. Press the chicken into the shredded coconut, turning to coat all sides. Place the breaded piece on a plate. Repeat with all remaining chicken pieces.
Fry the Chicken
  1. Once the oil is hot, gently add the chicken pieces one at a time, being careful not to overcrowd the pot. Cook in batches if needed.
  2. Fry the chicken for about 4 minutes, then flip carefully and cook for another 4 minutes, until golden brown and cooked through (internal temperature of 165°F).
  3. Using a slotted spoon, transfer the cooked chicken to a plate lined with paper towels to drain.
Serve
  1. Serve the crunchy coconut chicken plain or with your favorite dipping sauce—honey, orange sauce, or sweet and sour sauce all work beautifully.

Notes

For a lighter version, bake at 400°F for 15–18 minutes or air fry at 375°F for 10–12 minutes, flipping halfway. Unsweetened coconut can be substituted for a less sweet coating. Leftovers keep in the fridge for up to 3 days; reheat in the oven or air fryer to restore crunch. Avoid overcrowding the pot when frying to maintain oil temperature. This recipe is naturally gluten-free, but always check your cornstarch label if needed.
