Ingredients
  

  • 1 pound ground beef
  • 1 onion chopped
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can black beans 15 ounce, rinsed and drained
  • 1 can corn 15 ounce, drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • sour cream, guacamole, chopped tomatoes, shredded lettuce Optional toppings

Method
 

  1. Brown the ground beef in a large skillet over medium heat. Drain any accumulated grease.
  2. Add the onion and cook until it softens.
  3. Stir in the taco seasoning and water. Bring the mixture to a simmer.
  4. Incorporate the black beans, corn, and salsa. Cook for 5 minutes, stirring occasionally.
  5. Sprinkle with cheddar cheese. Cover and cook until the cheese is fully melted.
  6. Garnish with your preferred toppings and serve.

Ingredient Swap: I've found that a good Monterey Jack or even a Mexican blend cheese melts beautifully in this skillet, giving it a slightly different but equally delicious flavor when I'm out
