  • 2 tablespoons extra-virgin olive oil a fruity California olive oil is lovely here
  • 1 large yellow onion finely chopped
  • 1/2 teaspoon sea salt plus more to taste
  • 1 medium (about 3 pounds) butternut squash peeled, seeded, and cut into 1 inch cubes (about 8 cups)
  • 3 cloves garlic minced
  • 1 tablespoon fresh sage chopped
  • 1/2 tablespoon fresh rosemary minced
  • 1 teaspoon fresh ginger peeled and grated
  • 3 to 4 cups vegetable broth low sodium recommended
  • Freshly ground black pepper to taste
For Serving
  • Chopped fresh parsley for garnish
  • Toasted pepitas pumpkin seeds, for garnish
  • Crusty sourdough bread such as San Francisco style, for serving

Method
 

  1. Warm the olive oil in a large soup pot or Dutch oven over medium heat. Add the onion, salt, and a few generous grinds of black pepper. Cook, stirring occasionally, until the onion is soft and translucent, 5 to 8 minutes.
  2. Stir in the cubed butternut squash and cook for 8 to 10 minutes, stirring occasionally, until the squash begins to soften. Add the garlic, sage, rosemary, and ginger and cook for 30 seconds to 1 minute, until fragrant. Pour in 3 cups of the broth, raise the heat to high, and bring to a boil. Once boiling, cover the pot, reduce the heat to a gentle simmer, and cook until the squash is completely tender, 20 to 30 minutes.
  3. Let the soup cool slightly, then puree it in batches in a blender until completely smooth. If the soup looks too thick, add the remaining cup of broth and blend again. Taste and adjust the seasoning with salt and pepper, then serve warm with parsley, pepitas, and sourdough bread.

Notes

Choose a low-sodium vegetable broth so you can control the final salt level.
Peel and cube the squash first; a 3 pound squash yields about 8 cups of cubes.
Let the soup cool for 10 minutes before blending to avoid splatter and burns.
An immersion blender is a great no-fuss alternative if you own one.
Store leftovers in a sealed container in the refrigerator for up to 4 days or freeze for up to 3 months.
Gently reheat on the stove with a splash of broth or water to restore the silky texture.
For a nuttier finish, toast the pepitas in a dry skillet for a few minutes until they start to pop.
