Ingredients
  

For the Pasta
  • 8 ounces penne pasta
For the Chicken
  • 2 tablespoons olive oil preferably California-grown
  • 2 boneless skinless chicken breasts about 1 pound total
  • 1 1/2 tablespoons Cajun seasoning divided
For the Sauce
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups half-and-half
  • 1/3 cup grated Parmesan cheese plus extra for garnish
  • salt and freshly ground black pepper to taste
For Garnish
  • 1 diced tomato about 1 cup
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Pasta
  1. Bring a large pot of water to a rolling boil and add 1 teaspoon of kosher salt. Cook the penne according to package directions until al dente. Drain and set aside.
Cook the Chicken
  1. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  2. Season both sides of the chicken breasts with 1 tablespoon of the Cajun seasoning. Add the chicken to the skillet and cook for about 3 minutes per side, until the internal temperature reaches 165°F. Remove the chicken from the skillet, wipe the pan clean, and return it to medium heat.
Make the Sauce
  1. Melt the butter in the skillet, then add the minced garlic and sauté for about 30 seconds until fragrant. Whisk in the flour and cook for another 30 seconds.
  2. Slowly pour in the half-and-half, starting with about 1 tablespoon at a time, whisking constantly. Once you've added about 1/2 cup, you can add the rest more quickly. The sauce should thicken in less than a minute.
  3. Stir in the Parmesan cheese until fully melted. Add the remaining 1/2 tablespoon Cajun seasoning and season with salt and pepper to taste.
Assemble and Serve
  1. Add the cooked penne to the sauce and toss to coat. Top with diced tomato, fresh parsley, extra Parmesan, and the sliced cooked chicken. Serve immediately.

Notes

For a lighter version, substitute half-and-half with whole milk and add 1 tablespoon extra flour for thickening. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently with a splash of milk. To make ahead, cook the pasta and chicken separately, then combine with sauce just before serving. Avoid overcooking the chicken; use a meat thermometer for perfect doneness. Serve with a side of steamed broccoli or a simple green salad for a complete meal.
