- In a mixing bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Coat chicken breasts with the marinade. Marinate for at least 30 minutes, or refrigerate for up to 2 hours for enhanced flavor.
- Preheat a grill or stovetop grill pan to medium-high heat. Add marinated chicken breasts and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove chicken from the grill and rest for a few minutes before slicing into strips.
- While chicken grills, prepare remaining ingredients. In a large bowl, combine cooked quinoa or rice, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley. Drizzle with lemon juice and toss well.
- Divide the quinoa or rice mixture among serving bowls. Top each bowl with sliced grilled chicken, crumbled feta cheese, and a generous drizzle of tzatziki sauce.
- Serve immediately.

Ingredient Swap: I've found that boneless, skinless chicken thighs are a fantastic alternative to breasts here; they stay incredibly juicy, even if you accidentally overcook them a smidge.
