Ingredients
  

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup fresh parsley chopped
  • 1 Meyer lemon for juice
  • Tzatziki sauce for drizzling

Method
 

  1. In a mixing bowl, combine olive oil, dried oregano, garlic powder, salt, and pepper. Coat chicken breasts with the marinade. Marinate for at least 30 minutes, or refrigerate for up to 2 hours for enhanced flavor.
  2. Preheat a grill or stovetop grill pan to medium-high heat. Add marinated chicken breasts and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove chicken from the grill and rest for a few minutes before slicing into strips.
  3. While chicken grills, prepare remaining ingredients. In a large bowl, combine cooked quinoa or rice, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley. Drizzle with lemon juice and toss well.
  4. Divide the quinoa or rice mixture among serving bowls. Top each bowl with sliced grilled chicken, crumbled feta cheese, and a generous drizzle of tzatziki sauce.
  5. Serve immediately.

Notes

Ingredient Swap: I've found that boneless, skinless chicken thighs are a fantastic alternative to breasts here; they stay incredibly juicy, even if you accidentally overcook them a smidge.
