- Whisk Greek yogurt, adobo sauce, lemon juice, herbs, and seasonings in a small bowl. Set aside or refrigerate until serving.
- Whisk eggs in one bowl. In a separate bowl, mix panko breadcrumbs, paprika, chili powder, garlic powder, onion powder, and salt/pepper. Dip cauliflower florets completely in the egg wash, then dredge in the breadcrumb mixture. Shake off excess breadcrumbs and place on the air fryer's wire rack.
- Cook cauliflower wings in batches if necessary, depending on your air fryer's size. Place them in a single layer on the rack, avoiding overcrowding to ensure air circulation and crispiness.
- Place wings in the air fryer at 400°F (200°C) for 6 minutes. Flip them, then continue air-frying for another 6 minutes until golden and crispy.
- Place breaded wings on an oil-sprayed baking sheet. Bake in the oven at 400°F (200°C) for 20 minutes, flipping halfway through. Do not overcrowd the baking sheet.
- While cauliflower wings cook, whisk all honey garlic sauce ingredients together. Bring the sauce to a boil on the stove. Reduce heat and simmer for 4 to 5 minutes until thickened.
- Once cauliflower wings are ready, toss them with the honey garlic sauce until completely coated. Top with sesame seeds and green onions, if desired. Serve with the spicy ranch dipping sauce.
