Ingredients
  

  • 1 1/4 pounds boneless skinless chicken thighs
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 3 tablespoons fresh cilantro finely diced
  • 2 tablespoons Napa Valley olive oil
  • 1 tablespoon honey
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 ripe Hass avocados cubed
  • 1/3 cup cilantro finely diced
  • 1/4 cup red onion diced
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt
  • 2 cups cooked cilantro lime rice
  • 1 can black beans drained and rinsed
  • 1 1/2 cups corn
  • 1/2 cup plain Greek yogurt
  • 2 chipotle peppers in adobo
  • 1-2 tablespoons adobo sauce
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder

Method
 

  1. In a bowl, whisk together lime juice, cilantro, olive oil, honey, paprika, garlic powder, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
  2. Prepare cilantro lime rice. For the salsa, combine diced avocado, cilantro, red onion, lime juice, and salt.
  3. Blend the chipotle sauce ingredients until smooth.
  4. Cook the marinated chicken in an oven or air fryer until it reaches an internal temperature of 165°F.
  5. Assemble bowls using rice as the base. Top with black beans, corn, avocado salsa, and sliced chicken. Drizzle with chipotle sauce.

Notes

Ingredient Swap: I often find myself without boneless skinless chicken thighs, and I've successfully used chicken breasts, just remember to keep a close eye on them because they can dry out
