Method
- Place chicken in a bowl. Add onion, garlic, fresh herbs, Greek yogurt, olive oil, sumac, thyme, cayenne pepper, salt, and pepper to a small food processor. Process until well blended. Transfer the mixture to the chicken, massage it in, cover, and marinate for 2-6 hours.
- Choose to cook the chicken on the stovetop, in an air fryer, or in the oven. For stovetop cooking, heat a pan over medium heat, add 1 tablespoon avocado oil, and cook the chicken for approximately 10 minutes or until done, flipping halfway through.
- Bring a medium saucepan of water to a boil. Prepare the Kaizen rice according to package directions, then drain.
- Spoon the Kaizen rice into a serving bowl. Arrange arugula and tomatoes on top, then add the chicken and jalapeños.
- Optionally, pan-fry two slices of halloumi cheese in a medium skillet for 1-2 minutes per side until golden brown. Top the rice bowl with the halloumi cheese, or substitute with fresh feta cheese.
- Whisk together the sauce ingredients in a bowl. Taste and adjust seasonings as preferred. Drizzle the sauce over the rice bowl and serve.

Ingredient Swap: I've had great success swapping the Kaizen rice for cauliflower rice when I'm looking for an even lighter base, it really soaks up all the delicious sauce.
