- Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- Prepare the chicken by cutting it in half horizontally for cutlets, then pound it to an even thickness.
- Mix olive oil, minced garlic, Italian seasoning, salt, and pepper in a bowl, then marinate the chicken for 15-30 minutes.
- Sauté the spinach in a skillet over medium heat until wilted. Set it aside to cool.
- Beat the cream cheese until smooth, then combine it with the sautéed spinach and half of the mozzarella.
- Arrange the marinated chicken in the greased baking dish; optionally, sear the chicken for extra depth of flavor.
- Spread the creamy spinach mixture over the chicken and top with the remaining mozzarella.
- Bake for 20-30 minutes until the cheese is bubbly and the chicken reaches an internal temperature of 165°F.
- Let sit for 5 minutes before serving.
