- In a small bowl, whisk together honey, chipotle peppers, smoked paprika, garlic powder, cumin, salt, pepper, and lime juice to create the sauce.
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then cook for 6–8 minutes per side until golden brown (internal temperature 165°F).
- Drizzle the honey chipotle sauce over the cooked chicken. Let it rest for five minutes before slicing.
- In serving bowls, layer rice, black beans, cherry tomatoes, corn, red onion, avocado slices, and chopped cilantro.
- Optionally, whisk olive oil, lime juice, honey, garlic powder, salt, and pepper to make the dressing. Drizzle it over the assembled bowls.
- Top each bowl with sliced chicken and serve immediately.
