Ingredients
  

  • 2 pounds baby potatoes or Yukon gold potatoes cut into halves or quarters
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary or thyme optional
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Place cut potatoes in a large bowl. Add olive oil, minced garlic, salt, black pepper, and dried rosemary or thyme, if using. Toss thoroughly to coat all pieces evenly.
  3. Spread potatoes in a single layer on a parchment-lined baking sheet, cut side down.
  4. Place baking sheet in the oven and roast potatoes for 30 to 35 minutes. Flip potatoes once halfway through cooking for even browning.
  5. Remove potatoes from the oven when golden brown and crispy. Sprinkle with chopped fresh parsley before serving.
