Easy One-Pan Ground Beef Taco Skillet

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey 93% lean recommended
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1 small yellow onion diced
  • 1 bell pepper any color, diced
  • 1 cup canned corn drained
  • 1 cup black beans rinsed and drained
  • 1 can (14.5 oz) diced tomatoes (with green chilies if desired)
  • 1 cup cooked rice or cauliflower rice optional, for serving or mixing in
  • ½ cup shredded cheddar cheese optional topping
Optional toppings:
  • sour cream, chopped cilantro, sliced jalapeños, avocado

Method
 

Heat oil and sauté veggies
  1. Add olive oil to a large skillet over medium heat. Sauté diced onion and bell pepper for 4–5 minutes until soft.
Brown the ground turkey
  1. Add ground turkey to the skillet and cook for 6–8 minutes until browned, breaking it up with a spatula.
Add seasoning and canned ingredients
  1. Sprinkle in taco seasoning and stir to coat the turkey. Add diced tomatoes, corn, and black beans, then mix well.
Simmer and let flavors meld
  1. Reduce heat and simmer for 5–7 minutes, allowing the ingredients to absorb the seasoning and thicken slightly.
Optional: Mix in rice
  1. If using cooked rice or cauliflower rice, stir it in and heat through for 2–3 minutes.
Top with cheese and serve
  1. Sprinkle with shredded cheese and cover for about 1 minute until melted. Serve with desired toppings.
