- Whisk together olive oil, lemon zest, lemon juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes in a bowl to create a fragrant marinade. Coat the chicken pieces with the marinade and chill them in the fridge for at least 30 minutes.
- While the chicken marinates, mix Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, salt, and dill in another bowl to make the creamy tzatziki.
- Prepare your vegetables: tear or chop the lettuce, dice tomatoes and cucumber, slice red onion, crumble feta cheese, and chop fresh parsley. Cook the rice beforehand.
- Remove the marinated chicken from the fridge. Air fry at 380°F for about 7 minutes, then flip and cook for another 3-4 minutes until golden brown and the internal temperature reaches 165°F. Alternatively, sauté on medium-high heat for 7-8 minutes per side.
- Once the chicken is cooked, let it rest on a cutting board for about 5 minutes.
- In serving bowls, layer the cooked rice, then the chopped vegetables. Slice the chicken and place it on top, then generously drizzle with tzatziki sauce.
- Finish by sprinkling crumbled feta cheese and fresh parsley over each bowl. Serve warm.
