Easy Air Fryer Bang Bang Chicken Meatballs

Ingredients
  

  • 1 pound ground chicken organic
  • 1 tablespoon garlic salt
  • 1 teaspoon seasoned pepper
  • 1 onion small, finely chopped
  • 1 teaspoon minced garlic
  • 2 tablespoons parsley finely chopped
  • 1 egg
  • 1/2 cup crushed Ritz crackers
  • 1/3 cup teriyaki sauce
  • olive oil spray
  • 1/4 cup Greek yogurt
  • 1/2 cup sweet chili sauce
  • 1/8 cup parsley finely chopped, for garnish

Method
 

  1. Prepare the meatball mixture.
  2. Place the ground chicken in a large bowl and break it apart with a fork.
  3. Sprinkle garlic salt, seasoned pepper, and parsley over the chicken.
  4. Add the finely chopped onion, minced garlic, egg, and crushed Ritz crackers; mix well until fully combined.
  5. Stir in the teriyaki sauce to bind the mixture.
  6. Form the meatballs.
  7. Using your hands or a small scoop, form the mixture into meatballs about 1 1/2 inches in diameter.
  8. Place the formed meatballs in a single layer into the air fryer basket, ensuring they do not touch.
  9. Cook in the air fryer.
  10. Generously spray the meatballs with olive oil spray.
  11. Set the air fryer to 400°F (200°C) and cook for 12 minutes.
  12. At the 6-minute mark, carefully turn the meatballs and lightly spray them again with olive oil.
  13. Check for doneness.
  14. After 12 minutes, check the meatballs to ensure they are golden brown and cooked through (no pink inside); cut one open to verify. If not fully cooked, air fry for an additional 3-4 minutes.
  15. Prepare the sauce.
  16. In a medium bowl, mix the Greek yogurt and sweet chili sauce until smooth and creamy.
  17. Coat and garnish.
  18. Toss the cooked meatballs in the bang bang sauce until evenly coated.
  19. Garnish with finely chopped parsley and serve hot.

Notes

Ingredient Swap: I've personally found that ground turkey works beautifully if you're out of chicken, just make sure not to overmix it so it stays tender.
