Ingredients

  • 8 ounces halloumi firm, cut into 3/4-inch cubes (225 g)
  • 2 tablespoons plain all-purpose flour for dusting
  • 2 tablespoons neutral oil (grapeseed or sunflower)
  • 2 tablespoons honey warmed slightly
  • 1 teaspoon chili flakes or 1/2 teaspoon chili paste
  • 1 teaspoon soy sauce low-sodium preferred
  • 1 teaspoon Meyer lemon juice fresh
  • 1 tablespoon toasted sesame seeds lightly crushed
  • 1 tablespoon fresh parsley or cilantro finely chopped
  • 1/2 lemon Meyer lemon zest optional

Method

  1. Dry the halloumi with paper towels and toss gently in the flour to coat all sides.
  2. Heat a wide skillet over medium-high heat until shimmering, then add the oil.
  3. Arrange the cubes in one layer without crowding.
  4. Cook undisturbed for 2–3 minutes until deeply golden beneath.
  5. Flip the cubes to brown the remaining faces, about 1–2 minutes per side.
  6. Remove the halloumi and set on a wire rack.
  7. Reduce heat to low, and in the same pan, add the warmed honey, chili flakes, soy sauce, and lemon juice.
  8. Stir and let the mixture bubble for about 30–45 seconds.
  9. Return the halloumi to the pan and toss briefly to coat with the glaze.
  10. Garnish with toasted sesame seeds, herbs, and lemon zest.

Notes

Chili Heat Variation: I love playing with the heat, sometimes I use a milder chili flake for a gentle warmth, and other times I go for a hotter variety or even add a tiny pinch
