Method
Make the filling
- Sauté the onion and garlic in the oil and butter over medium-low heat until translucent.
- Add the flour and cook for a few minutes to remove its raw taste.
- Add the spices, cooked chicken, and broth; cook until the flavors combine.
- Lastly, reduce the heat, then add the cream and spinach. Stir to combine and wilt the spinach, then remove from heat.
Notes
Ingredient Swap: I've often used leftover roasted turkey from holiday meals in this pie, and it's absolutely delicious, absorbing all those rich flavors beautifully.
