Method
- Peel the apples, then cut them into small cubes. The finer the dice, the faster they will soften.
- Put the cubed apples in a saucepan, then stir in the water, sugar, cinnamon, nutmeg, and ginger until everything is well combined.
- Cover the saucepan and set it over medium heat. Let the mixture simmer for 15 to 20 minutes, or until the apples are fork-tender.
- Mash the apples with a fork or potato masher, then stir the applesauce well.
- Serve the applesauce right away, or chill it in the refrigerator and serve cold.

Notes
Swap Honeycrisp apples with Fuji, Gala, or Pink Lady for a similar texture and sweetness.
For a smooth applesauce, blend the finished mixture in a food processor or blender.
Sweetness varies by apple, so start with 1/2 cup of sugar and taste before adding more.
Stir the apples occasionally while they simmer to prevent sticking on the bottom of the pan.
Keep leftovers in a sealed container in the refrigerator for up to 1 week.
This applesauce freezes well for up to 3 months; thaw it in the fridge overnight.
Serve it warm over oatmeal or pancakes, or chilled with a dollop of yogurt or alongside pork.
