Ingredients
  

Yellow Layer
  • 2 1/2 cups mini marshmallows
  • 2 tablespoons butter
  • 1 big pinch salt
  • 5 drops yellow gel food coloring
  • 2 1/4 cups crisp rice cereal
Orange Layer
  • 1 3/4 cups mini marshmallows
  • 2 tablespoons butter
  • 1 big pinch salt
  • 5 drops yellow gel food coloring
  • 1-2 drops red gel food coloring to create orange
  • 1 1/4 cups crisp rice cereal plus 2 tablespoons
White Layer
  • 3/4 cup mini marshmallows
  • 1 tablespoon butter
  • 1 big pinch salt
  • 3/4 cup crisp rice cereal

Method
 

  1. Lightly spray an 8 or 9 inch round cake pan with nonstick cooking spray, or grease it well with extra butter.
  2. In a large microwave safe bowl, make the yellow layer: combine 2 1/2 cups marshmallows, 2 tablespoons butter, and a big pinch of salt. Microwave on high for 30 seconds, then stir until smooth. If needed, microwave for another 15 seconds. Blend in the yellow food coloring, then fold in the crisp rice cereal.
  3. Use greased or damp hands to press the yellow mixture against the sides of the pan, forming a ring, with the center empty.
  4. In the same bowl, make the orange layer with the next set of ingredients: microwave the marshmallows, butter and salt until melted; add the yellow and red food colorings and the specified crisp rice cereal. Press this orange mixture into a ring just inside the yellow layer, leaving the middle open.
  5. Using a clean bowl, make the white layer by melting the remaining marshmallows, butter, and salt, then folding in the remaining cereal. Press the white layer into the center of the pan.
  6. Let the treats cool completely, at least 2 hours, before slicing into 8 triangular wedges.

Notes

Use gel food coloring rather than liquid for the most vivid yellow and orange.
Press the layers in firmly so they hold together when sliced.
Keep the pan at room temperature for 2 hours minimum before cutting; rushing can make them crack.
Store leftover treats in an airtight container for up to 3 days, layering wax paper between pieces if stacked.
These freeze well for up to 3 months; thaw overnight in the refrigerator.
To make them gluten free, be sure to use certified gluten free crisp rice cereal.
For cleaner cuts, dip your knife in hot water and wipe it dry before each slice.
