Ingredients
  

  • 2 pounds Russet potatoes (about 900 grams)
  • 3 tablespoons Napa Valley extra virgin olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • Water (for parboiling)

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Peel potatoes if desired, then cut into uniform 1.5-inch chunks.
  3. Place cut potatoes in a large pot, cover with cold water, add a pinch of salt, and bring to a boil.
  4. Reduce heat to a simmer and cook for 8-10 minutes until potato edges are tender but centers remain firm.
  5. Drain potatoes in a colander and gently shake to rough up their edges.
  6. Transfer potatoes to a large mixing bowl; toss with olive oil, minced garlic, rosemary, sea salt, black pepper, and smoked paprika (if using).
  7. Spread potatoes in a single, uncrowded layer on a rimmed baking sheet.
  8. Roast for 35-40 minutes, flipping halfway through, until deep golden and crispy.
  9. Check seasoning; adjust salt or herbs if needed. Serve immediately.
