Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 2 cups fresh spinach chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Method
 

  1. Season chicken breasts on both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-7 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds. Add chopped spinach and cook until wilted. Pour in heavy cream and bring the mixture to a simmer.
  4. Stir in grated Parmesan cheese until the sauce is smooth and creamy. Adjust thickness with chicken broth or additional cream as needed.
  5. Return the seared chicken to the skillet, coating it with the creamy spinach sauce. Simmer for an additional 2-3 minutes.
  6. Plate the dish and garnish with fresh parsley, if desired. Serve with rice or crusty bread.

Notes

Ingredient Swap: I've definitely swapped out fresh spinach for frozen before, especially when I'm in a pinch.
Just make sure to thoroughly drain any excess water from the thawed spinach so your sauce
