Method
- Season chicken breasts on both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 5-7 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds. Add chopped spinach and cook until wilted. Pour in heavy cream and bring the mixture to a simmer.
- Stir in grated Parmesan cheese until the sauce is smooth and creamy. Adjust thickness with chicken broth or additional cream as needed.
- Return the seared chicken to the skillet, coating it with the creamy spinach sauce. Simmer for an additional 2-3 minutes.
- Plate the dish and garnish with fresh parsley, if desired. Serve with rice or crusty bread.

Ingredient Swap: I've definitely swapped out fresh spinach for frozen before, especially when I'm in a pinch.
