Method
- Thoroughly dry the chicken with paper towels. Generously season the chicken all over with salt and pepper.
- Heat the oil in a 10-inch or larger skillet over medium-high heat until shimmering. If necessary, work in batches; add the chicken and sear until deeply browned on the bottom for 5 to 7 minutes. Flip the chicken with tongs and sear the other side until browned for 5 to 7 minutes. Transfer the chicken to a plate and set it aside.
- Reduce the heat to medium and melt the butter in the skillet. Add the mushrooms, onion, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper; cook, stirring occasionally, until tender, about 7 minutes. Add the flour, stir to evenly coat the vegetables, and cook for 1 minute.
- Stir in the half-and-half or milk and broth until no flour lumps remain. Bring the mixture to a boil. Reduce the heat to a simmer and stir in the Parmesan. Return the chicken to the pan and simmer until the sauce thickens and the chicken cooks through, 2 to 3 minutes. Sprinkle with additional Parmesan and parsley before serving.
