Ingredients
  

  • 4 chicken thighs skin-on, bone-in
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 4 cloves fresh garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 cups chicken broth
  • 2 cups cooked rice jasmine or basmati
  • 2 tablespoons neutral oil vegetable or canola
  • 2 green onions chopped, optional, for garnish

Method
 

  1. Season chicken thighs with salt and pepper.
  2. Heat oil in a pan over medium-high heat. Sear chicken thighs skin-side down until golden and crisp.
  3. Flip the chicken. Add soy sauce and brown sugar. Simmer until the chicken is glazed and caramelized.
  4. Add minced garlic and ginger. Stir to release aroma and flavor.
  5. Pour in chicken broth. Simmer gently until the chicken is cooked through and tender (about 25–30 minutes).
  6. Meanwhile, cook the rice separately.
  7. To serve, place rice in bowls. Top with chicken and ladle over garlic-ginger broth.
  8. Garnish with chopped green onions if desired.
