Method
- Season chicken thighs with salt and pepper.
- Heat oil in a pan over medium-high heat. Sear chicken thighs skin-side down until golden and crisp.
- Flip the chicken. Add soy sauce and brown sugar. Simmer until the chicken is glazed and caramelized.
- Add minced garlic and ginger. Stir to release aroma and flavor.
- Pour in chicken broth. Simmer gently until the chicken is cooked through and tender (about 25–30 minutes).
- Meanwhile, cook the rice separately.
- To serve, place rice in bowls. Top with chicken and ladle over garlic-ginger broth.
- Garnish with chopped green onions if desired.
